Chateau de Fontaine Audon Sancerre, Langlois-Chateau 75cl
Details of production
Langlois-Chateau own this exquisite property and its 15 hectare vineyard on the flinty ‘silex’ soils which characterize Sancerre. located in St-Gemme en Sancerrois in the north western part of the Appellation, the vineyard entirely surrounds the Château, and the plot’s usual yield is around 55 hl/ha. Both hand
and mechanical picking are used. The grapes are then pressed delicately using a pneumatic press with selection of the best juice. The fermentation occurs in small thermo-regulated stainless steel vats and the wine is matured on the lees until bottling in spring.
A very expressive nose, perfectly typical of the Sauvignon blanc grape variety, with citrusy and exotic fruit notes. On the palate, very good balance and freshness.
How to serve
A terroir of flint brings this wine a mineral flavour. Ideal with goat’s cheese,
fish and shellfish. It is also a wonderful accompaniment for more exotic dishes
